Gotta love,
a bit of weird!
Me and my old man were in this fancy looking restaurant at the top of The Stratosphere on the Vegas Strip. Our waiter, who called himself ‘The Doctor’, has always stuck with me since. He was seriously one of the best waiters I’ve ever had the pleasure of encountering, he was just so, so, so good. So good that I remember everything about him nearly 15 years later. He was about 5ft 5, 30 year old something, handsome black man, slightly on the podgy side, with a pretty fake but also endearing accent. He had long pleated hair tied right back off his face which added to his cool as fuck demeanour. When I asked him why he called himself ‘The Doctor’ he casually stated, “Its because I’m going to take care of you, of course.” Now, I’d probably think that that’s a bit weird, but I do love when people have a bit of weird in them. Adds a bit of spark into life. Anyway, he recommended the Philly Cheese Steak to me and ever since then I’ve loved it. This recipe has had many changes and adaptions since I first tried to make it. Im pretty sure this version of the sandwich will be the final…ish…

Hey!
So the closest thing we can associate this sandwich to is a Philly Cheese Steak simply because of the cheese and steak combo. Cam first had a creation of this sandwich during his trip to Las Vegas for his 21st Birthday and it’s been his favourite sandwich since then.

The Recipe
Stage #1

Ciabatta

1 x Good Quality
Ciabatta Bread
Cut the Bread in half - Nice one, you’re done.
mmmh… Steak!
2 Rump Steaks
Table Salt
Cracked Black Pepper
Pull the Steaks out of the fridge a wee while before you’re going to cook to bring them up to room temperature. (Allows for a more even cook!)
Give em’ a good slap with some Salt.
Veggies
1 Sweet Pointed Pepper
1 Red Pepper
1 Clove Garlic
2 Green Chillis
150g Button Mushrooms
1 Red Onion
1 tbsp Chopped Parsley
1 Tbsp Chopped Coriander
25g Caster Sugar
35 Unsalted ButterTable Salt
Cracked Black Pepper
Vegetable Oil
Kitchen Paper
Finely chop the Garlic and Chilli's. Roughly chop the Parsley & Coriander (stalks and all).
Chop the rest of the veg into strips and mix it all together.
Buffalo Sauce
150g Franks Hot Sauce
1 Cloves Garlic
10g Ginger
25g White Wine Vinegar
35g Caster Sugar
20g Worchester Sauce
100g Butter
Table Salt
Lemon Juice
Grate the Garlic & Ginger.
Place everything into a pot and bring it up to the boil. Reduce slightly, turn off the heat and add in the Butter.
Leave for 10 minutes and allow the Butter to melt, add some Salt and Lemon Juice to taste and them blend on full until emulsified.
Garnish
4 Slices of Gouda
4 Slices of American Cheese
Stage #2
>Cook it baby!
Pop a frying pan on a high heat and add some Oil. Cook the Steaks to medium rare. Rest well before slicing into thin strips. Season with Black Pepper.
Put your Sauce back on the stove and heat gently until warm.
Meanwhile, heat a pan on high heat and add some Oil. Fuck in all the veg and toss well. Cook until coloured and slightly softened. Add in the Butter, Sugar and chopped Herbs. Season well with Salt & Peppa’. Drain on Kitchen Paper.
