Hey!

Out of all the dessert recipes, this was the one Cam was most excited about doing! For one it is simple, two it is tasty, and three it’s fucking rum & pineapple! It is the K9’s undercarriage! One of the best things Cam has ever made was a slice of pineapple on a BBQ and then covered it in rum. The salt dough really brings out the sweetness to the pineapple however, if you have a BBQ just get it onto the that and coat it in rum! Overall, this was just a way to get a cheesy photo of nothing but a pineapple! Cam is well happy!

>Stand Mixer W/ Dough Hook



The Recipe


Stage #1
>the PREP

Salt Dough

500g Flour
4 Egg Whites
250g Table Salt
150g Water (Approx)
1 Large Pineapple

  • Place the Flour & Salt into a Mixer and attach a Dough Hook.

  • Start mixing and add in the Egg Whites.

  • Add the Water until you get a good together dough. Surely you have made salt dough with the kids or when you were a kid yourself? All you are looking for is a good dough that does not fall apart.

  • Wrap your dough around your Pineapple and leave to one side until you are ready to cook.

 

 

Rum Syrup

170g Dark Rum
50g Lime Juice
100g Sugar
1/2 Vanilla Pod

  • Pour everything into a pot and bring up to the boil.

  • Take off the heat and leave to cool.

  • Done!

 
 

Stage #2
>Cook it baby!

 
  • Preheat the oven to 180ºC.

  • Bake the Pineapple for 1 hour 15 minutes.


Stage #3
>Assemble

 
  • Crack it open, slice, glaze.

  • Done!
