Time

So the first time I had a Ramos Gin Fizz was in Thailand with Jade. We both have conflicting stories of where we were and what was ordered etc. But, I know that I am correct as my memory is impeccable. Ask anybody who knows me…

Anyway we had just left a little bar in the middle of Bangkok. I say left, we fucking ran! We had just sat and watched some woman shoot darts out of her fanny for about 30 minutes trying to hit a balloon that Jade was holding. Man, this girl was exhausted. We went to pay the bill and they demanded a shit ton more than what we had been told on entry! 8000 Baht! We did not have 8000 Baht. We had 20 Baht. The madam was a bit aggressive and I was 100% sure there was going to be two big Thai motherfuckers come out of the velvet curtains and kick the shit out of me, so we left the 20 Baht and ran out. All the while, the Madame and the girls laughed at us. Shame. Shame. Shame. Anyway, we got our breath back and wandered down the street deciding to avoid the other ‘Ping Pong Bars’. We settled for a sophisticated outside bar and there it was, the Ramos Gin Fizz. Jade’s favourite cocktail that she’d told me about many a time but I had yet to try! It took about 45 minutes to get to us and this is when Jade explained the process of how long you have to shake this very special drink!

So after that ordeal of a day the Ramos has been imbedded in my brain. However, I did not remember the way it looked, tasted, or was garnished.

A glorious cocktail far too classy for the likes of us! We’ve taken the beautiful bones from this New Orleans beauty and added our own twist. We think it’s fabulous!

The Recipe


Stage #1
>The Prep

100ml King Soho Gin
30ml Cointreau

100ml The Syrup
2 Egg Whites
50ml Double Cream

Topped with Soda

1 Tbsp Freeze Dried Lemon
Vanilla Seeds


The Syrup

135ml Blood Orange Juice
1 Orange (Zest)
110ml Ruby Grapefruit Juice
1 Grapefruit (Zest)
100ml Orange Juice
55ml Lime Juice
1 Lime (Zest)
40ml Lemon Juice
1 Lemon (Zest)
138g Sugar
1/2 Vanilla Pod

  • Place the Sugar into a pot and make a dry caramel - dissolve the Sugar without any water.

  • Add in all the Zests & Vanilla Pod and stir.

  • Start adding all the juice little by little and incorporate it into the caramel.

  • Bring to the boil and remove from the heat. Strain and leave to cool.


Stage #2
>Assemble

 

shake & build \ high-ball glass

  • Dry shake (no Ice) all of your ingredients together (apart from the Garnish and Soda) - do this until your arms are about to fall off. You want a bangin’ foam!

  • Add some Ice to your Shaker and do it again. Shake it hard! Really hard! Shake it until your arms have actually fallen off and frozen from how cold the shaker is!

  • Double strain into a Highball, add your Ice and top with Soda Water.

  • Garnish with a sprinkle of Freeze Dried Lemon & Vanilla Seeds on top!
