Hey!

So we both love a Dark n’ Stormy and can also be quite partial to a Mojito. This is a pretty simple mash up of the two with a little addition of Kaffir Lime & Lemon Grass - pretty tasty if we do say so ourselves. Either way, this is a refreshing little number that you’re going to down like juice. Get some scran in you first so you don’t get wasted right at the beginning of the night and make a fool out of yourself.

The Recipe


Stage #1
>The Prep

100ml Kraken Black Spiced Rum

50ml Thai Smash Syrup
8 Lime Wedges
10 Mint Leaves

Topped with Crabbie’s Ginger Beer

Angostura Bitters
Dehydrated Lime Wheel
Sprig of Mint
Straw

 

 

Thai Smash Syrup

 

2 Sticks Lemongrass
5 Kaffir Lime Leaves
2 Limes (Juice)
30g Ginger
250g Water
250g Caster Sugar

  • Slice the Ginger (skin on).

  • Place all of your ingredients together in a pot on a medium to high heat.

  • Cook for 10 minutes until sticky.

  • Leave to infuse for at least 6 hours.

  • Pass through a very Fine Sieve and leave to cool.


Stage #2
>Assemble

 

build \ high-ball glass

  • Pop the Kraken & Syrup into your two High Ball Glasses. Slap the Mint Leaves between the palms of your hands to release flavour/aroma and chuck em’ in with the Lime Wedges.

  • Add the Crushed Ice to 3/4 full - using a long Bar Spoon gently fold the ingredients up through the ice. Is fold the right word? You know what we mean, don’t you? Don’t fucking massacre it by mixing it all angrily like a twat! You want the Mint and Lime to be nicely spaced throughout the Ice.

  • Top with Ginger Beer.

  • Add more Crushed Ice to create a nice mountain on top. Add a few dashes of Angostura Bitters on top and garnish with a Dehydrated Lime Wheel, Sprig of Mint and a Straw!

  • Tuck in!
