Time

In Thailand we ate a lot of ‘things on sticks’, but the majority of those things were Chicken… We think? Anyway, after a long day of walking, sweating and eating. Shit got real! No seriously! Shit, got, real! At this point in time Cam had had many a stomach issue, but we were only a year into our relationship and I was still trying to show him, well let’s say my best side, or at least, the non shitting kinda’ side!

Again, anyway, the stomach pains started, the bowl started making noises. Unreal cold sweats! Cam had told me about feeling like this before, but as I hadn’t experienced anything like it I just shrugged him off a bit and gave him a pity nod. Well Karma was about to hit me like the beautiful Bitch she åis.

I knew I’d eaten something dodgy… perhaps something to do with the chicken I’d ate earlier that was most definitely siting out in the roasting hot sun for hours… but who knows? We’re running up and down one of the vast streets of Bangkok while I’m casually trying to find a toilet. Nothing! Of all the bustling streets we’d been on earlier, we were now somehow walking down the side of a Freeway with absolutely no people, bars, restaurants or toilets in sight. I’m walking as fast as I can, still trying to act casual, clenching my butt cheeks with my make-up starting to melt off my face. Finally we come across a glimpse of civilisation, of course except from the mental traffic to our right. So happy to find a place that I could possibly, “Powder my nose”. I disregarded the fact that it was none other than a 5* Four Seasons Hotel - paved in gold, marble pillars, concierge at the door. Cam asks where the bar is while I signal for the bathroom, almost unable to talk. While he orders us a Prosecco and a Beer (Costing about £50!), I run around the corner, through the rainforest lobby and into the bathroom. I’ve never been so close to shitting myself in my life. One more second and I would have painted that entire cubicle a whole different colour.

Serves 3-6

Hey!

This recipe is relatively easy, with very simple elements. Buy good chicken, buy good miso and you’re happy!

Everything that has sticks in the title will always be made better with a BBQ or  yakitori (Konro Grill).  Well, to-be-honest, everything really is made better on open coals but as my old mentor used to say, “you got to piss with the cock you've got”.

Just make everything as hot as possible on whatever vessel you have. you always want to get a good char on these things!


Equipment…

>Grater
>Bamboo Skewers



The Recipe


Stage #1
>the PREP

Miso Marinade

50g Sake
85g Mirin
50g Red Miso
30g Light Soy Sauce
10g Ginger
25g Honey
2 Garlic Cloves
1 Lemon (Zest & Juice)
5g Sesame Oil

  • Grate the Garlic Cloves & Ginger.

  • Zest and juice the Lemon.

  • Place everything into a pot and bring to the boil.

  • Take off the heat immediately and chill.

 

 

Skewers

4 Chicken Thighs
Miso Marinade

6 Bamboo Skewers

  • Soak the skewers for a minimum of 30 minutes. 

  • Prep your Thighs - Skin off, de-bone and trim.

  • Cut the Chicken Thighs into small cubes, approx 1cm. 

  • Skewer 4 or 5 pieces of Chicken onto each skewer and place into the Marinade. Leave to marinade for 2 hours. 

 

 

Miso Sauce

Miso Marinade

  • Whilst your Chicken is cooking, on a medium to high heat, place your Marinade into a pot and reduce the sauce by half (You’re thickening it up and cooking off the raw Chicken).

  • Pass through a fine sieve.

  • Brush some of the sauce onto the skewers, saving some to serve.

 

 

Garnish

1 Lemon (Zest)
1 Red Chilli
5g Coriander (Leaves)

Cracked Black Pepper
Maldon Salt

  • Zest the Lemon.

  • De-seed and finely chop the Chilli.

  • Pick the Coriander leaves from the stalks.

 

Stage #2
>Cook it baby!

 
  • Get a pan searing hot.

  • Pap your Chicken Skewers into the pan, colour each side. Finish under the grill and brush with the Miso Sauce
