Time
So my ex and I had the most beautiful little dog called Ellie. She’s a tri-colour Border Collie and was my best friend in every means of the word. She’d listen to all my whining, take care of me if I was vomiting all over the bathroom floor because I’d had too much to drink.We’d even have a spoon in bed every night before sleep and resume position as soon as I woke up. Maybe that was a contributing factor as to why my actual relationship wasn’t working. Anyway, we’d decided to get Ellie because my ex was super broody and I just wasn’t ready to have kids at that time - I think we both dodged a bullet there!
We were living in Glasgow at the time and used to take her out on a walk to Queens Park every day - a lovely wee spot in Glasgow! Anyway, all you other dog owners will know that you can meet a fair few characters out on some walks - both doggy and human kind. Ellie decided to make friends with the most energetic little dog Honey. Now I believe Honey was a cross between a Pug and a Cavalier King Charles. This little dog would almost out run Ellie every time. She had these tiny little legs and with every gallop she took the deepest breath her tiny lungs could fathom, spitting and gasping so loudly. In all honesty it was the ugliest little dog you could imagine but also the happiest. Honeys owners were the most loveliest couple, a short blonde woman and tall stalky guy. They obviously doted upon this wee thing and clearly thought she was so beautiful (which she absolutely was - just not on the outside). They were like the parents that have a super ugly kid but still think they’re child could be the next big baby model - which I totally admire. Looks are bloody short lived! Anyway, I’m going off on my little tangents again. Honey’s Dad seemed like a really nice macho kinda man but whenever he would shout on his tiny dog his voice went up about three octaves, he kinda’ swung his head round like a dance move and would bellow in a very long winded sound, “HhhhuuuuuunnnnnnnneeeEEE!!”. Absolutely fabulous! We used to go home and wind Ellie up by shouting her wee pals name in the same tone and have a giggle at the same time. Ellie used to wag her tail frantically and look all around the house for her, so cute!

So this is another tasty little homemade butter that is so simple to make! The honey ripples through the silky butter adding a sultry sweetness that is balanced perfectly by the Crème Fraîche garnish.
Equipment…
>Stand Mixer w/Paddle Attachment
> Small Blender or Spice Grinder
The Recipe
Stage #1
>the PREP
Crème Fraîche Butter
1 Litre Single Cream
300g Crème Fraîche
15g Salt
Ice Water
Place the Cream and Crème Fraîche into a Stand Mixer and add a Paddle Attachment. Cover the top of the mixer with a damp towel.
Place the mixer on medium and beat the cream mixture until it goes solid and the mixture separates.
Take the solid Butter and wash in an Ice bath. Repeat the process with fresh water 5 times squeezing the butter each time.
Honey Butter
150g Butter
50g Crème Fraîche
6g Manuka Honey
Maldon Sea Salt
Place all the ingredients into a Spice Grinder or small Blender and mix until fully emulsified together.
Season with Salt to taste.

1 Tbsp Crème Fraîche
Cracked Black Pepper
Maldo Sea Salt
