Time
So, The ‘Frenchy’. A story completely un-related to this cocktail but pretty cute and springs to mind. Before our current flat, we used to live in a wee one bedroom place in the centre of Leith. Maia was around 4 months old and we’d just moved from this glorious god damn sexy Georgian flat near Haymarket to this little one bedroom fixer upper. We knew we wanted to save up for either a mortgage or towards our own restaurant and we also had a new wee bundle of screaming joy to take care of - so money was tight. This move was saving us a good £600. Our new landlord however had completely messed us around with so called promises and so everything was a bit worse for wear and not getting fixed anytime soon!
We decided to go out one day and try and find a few things that would make the place a little more homely. We took a wee gander up Leith Walk and popped into an array of charity shops and quirky little brick-a-brack places. Leith is an amazing wee area by the way! You’re not from Edinburgh if you’re from Leith, you’re a ‘Leither’! That’s a story for another time though! One of the shops we went into was Edinburgh Settlement Projects, a little voluntary run shop that does amazing things for the community. Now if you’ve walked past this place and had a wee bit of time on your hands I can guarantee that you went in! There’s always something that will catch your eye in the stacks of second hand treasures big and small. In a wee corner up the back theres a bundle of different secondhand artwork. Cam eagerly looks through it and falls in love with a little sketch of a french bull dog with the word ‘frenchy’ wrote above it. This thing was discoloured, curling up at the sides and totally discarded. Now, I go into a lot of shops and fall madly in love with this or that. Its very rare that Cam takes an interest in even looking, never mind finding something he loved, and he wouldn’t stop going on about how amazing this print was. I couldn’t not let him buy it. Cam walks up to the till to ask what’s the price. The guy say’s, “How much ye’ offerin’?”. Now, the sensible offer would be 50p, a few quid if you’re being generous. Cam goes, “£15? £20?”. In all the times we’ve never seen the guy so bloody chuffed,”All for a good cause!”. Well that it was. The cute tatty wee picture hung up in our kitchen for a good year until it fell to pieces and I swear Cam shed an actual tear when we had to throw it out. If anyone knows what print I’m on about it then give us a shout, we’ll pay top dollar! The graphic above sadly isn’t the same one but still pretty cute!

Hey!
So, as with all our cocktails we want to bring you something a little different from the standard. You know, elevate that shit. This one has some subtle differences but will bring out the best flavours in all the ingredients and create one sexy drink! Enjoy!

>Fine Sieve or
Cheesecloth
The Recipe
Stage #1
>The Prep
100ml Butter Washed Vodka
50ml Chamboard
150ml Freshly Squeezed Pineapple Juice
1/2 Lemon (Juice)
2 Tbsp Freeze Dried Raspberries
Butter Washed Vodka
This makes double for the recipe above, but come on, you’re going to want another drink! Your prepped Vodka should keep in the fridge for around a week.
200ml of Absolut Vodka
75g Unsalted Butter
Gently melt down the Butter in a pan.
Decant the Vodka into an airtight glass bottle and pour in the melted butter - shake it vigourously.
Leave to cool at room temp for around 3 hours and then refrigerate over night.
Strain the Vodka through a very Fine Sieve or Cheesecloth to discard the separated fat.
Freshly Squeezed Pineapple Juice
This bit really makes all the difference in flavour. Don’t be a cheap bastard and buy concentrated juice. If you really can’t be arsed squeezing your own juice straight from the pineapple then go buy some pure juice from a fancy shop like M&S or Waitrose.
1 Ripe Pineapple
Water
Trim off the edges and discard alongside the core. Cut it into chunks and shove it in a Blender. Add some water until you achieve a nice consistency (not overly runny).
Strain it through a Fine Sieve.
Stage #2
>Assemble
shake \ coup glass
Dry shake (no Ice) all of your ingredients together (apart from the Freeze Dried Raspberries) - this will give your drink a better foam!
Add some Ice to your Shaker and do it again.
Double strain into a Coup Glass.
Garnish with a sprinkle of Freeze Dried Raspberries on top!
