Who Doseny’ like a good ol’ Eggs Benedict? Everyone has to love it!? Cornerstone of any tasty breakfast. Which means, at some point or other, we are going to have to do an eggs benny on this website and I will have to explain how to poach a bloody egg. Surely we have all come on a long enough journey in life to be able to poach an egg? You would think so, but it seems to be the nadir of a Chefs arsehole. I remember a certain Chef I worked with would get the trials to do three things.
One: Chop chives.
Two: Finley dice a shallot.
& Three: Poach an egg.
(or, if he was being a bit of an arse - make the perfect omelette)
If they could do all three then Boom the job was yours. Sounds like a piece of piss. Nah’, the amount of people that crumble! Now I’m not talking about Apprentices or fresh faced Commis, I mean CDP’s and Jnr Sous’ (the higher up Chefs). Quite cringeworthy to watch, even worse if you’re the one fucking it up - but hey ho. I will very rarely order a poached egg anywhere for that reason. Best getting no eggs and a piece of bread than the disappointment.

If you want to make your other half the most amazing breakfast you’re going to want to make these babies. Whether you’re doing a dirty Benny or a homemade take on the McMuffin this English Muff is just what you need to impress!
Equipment…
>stand Mixer
>Wire Rack
The Recipe
Stage #1
>Mix it up!
220 Strong White Flour
(Plus a wee bitty more for kneading)
150g Milk
8g Fresh Yeast
10g Caster Sugar
5g Salt
10g Butter
8g Olive Oil
Clingfilm
Place the Flour, Yeast, Sugar & Salt into your mixing bowl and turn on a low speed.
Heat the Milk, Butter & Olive Oil in a pan to approx 35ºc.
Pour the wet into the dry and turn the speed to medium - mix for 6 minutes.
Turn out the mix onto a floured surface and knead slightly.
Place into a bowl and wrap in Clingfilm.
Stage #2

Plain Flour for Rolling
Polenta for Dusting
Baking Tray
Clingfilm
Keep the bowl in a warm area and prove for 2 hours.
Remove the Clingfilm and knock back the dough and portion into 6 balls.
On a lightly floured surface, roll each ball between your palm and the counter until it comes together and feels firm.
Push the dough down to make a flat circle - repeat with the rest of the dough.
Place onto a Baking Tray and dust both sides with Polenta.
Cover loosley with Clingfilm and prove for a final hour.
Stage #3
>Bake it til’
you make it.
Polenta (for Lining)
Preheat the oven to 175ºc.
Place a pan onto a medium heat. and working very carefully when moving the dough toast each side of the Muffin.
Place onto a tray lined with Polenta.
Continue until all the dough has been toasted.
Bake in the oven for 15-20 minutes.
Remove and leave to cool on a Wire Rack.
