Hey!

Here’s our wonderful, simple, but super tasty crusty rolls recipe. Nice light airy centre with a crust that has the perfect crack. Absolutely perfect with a bangin’ bacon butty or a hearty soup if you’re that kinda’ guy.


Equipment…

>Stand Mixer
>Pastry Brush
>Wire rack



The Recipe


Stage #1
>Mix it up!

450 Strong Bread Flour
12g Table Salt
25g Fresh Yeast
150g Whole Milk
150g Water
30g Salted Butter

  • Place the Flour, Sugar & Yeast into a bowl and mix.

  • Add the Water, Milk & Butter into a pot and heat to approx 35ºC, making sure the Butter melts.

  • Slowly add the liquid mixture and work it into the Flour.

  • Keep working the bread for about 5-8 minutes until soft and stretchy.

  • Place into a large mixing bowl and get ready to prove.

Milk (for Brushing)
Flour (for Dusting)


Clingfilm

 
  • Cover your mixing bowl with Clingfilm and leave to prove for one hour or until doubled in size.

  • Knock back the bread for a couple of minutes and then weigh out into 90g balls.

  • Place onto floured baking trays and cover with some Clingfilm. Prove for another hour.

  • After the hour brush the rolls with some Milk and dust liberally with Flour.


Stage #3
Bake it til’
You make it.

 
  • Preheat the oven to 200ºc.

  • Place the rolls into the centre of the oven and throw one cup of water on to the base of the oven and close the door immediately. Cook for 14 Minutes.

  • Remove and leave to cool for 15-30 minutes.
