Time
Something that you do not really see much of around these parts of Edinburgh is some decent cornbread. Maybe we are not ready for it quite yet. Will we ever be? Who knows?!
Every-time I hear the words cornbread I cant help but think of the movie 'Life' with Eddie Murphy and Martin Lawrence - under-rated movie! I have not seen it since my childhood and scared to rewatch it incase it’s actually shit? However, there is a great part in where the big dog of the yard demands Murphy’s cornbread and.... well I cant do it justice on this page trying to type out the amazing delivery of Eddie Murphy when he was still funny. Anytime I hear somebody say it though I will recite that little part and nobody ever knows what the fuck I am talking about.
I digress, here’s our recipe for cornbread…

This little recipe is a great one if you fancy something a bit different. Well at least for us Scottish folk! A really tasty light bread with just the right amount of salty bacon-y goodness. Enjoy!

The Recipe
Stage #1
>Mix it up!
Bacon
12 Rashers Fatty
Smoked Streaky Bacon20g Butter
Cut your Bacon into decent sized lardons (about 1cm).
Melt the Butter in a pan on a low heat and add the lardons.
Render down the fat and crisp up the Bacon.
Sieve the fat from the Bacon into a container and reserve both the fat and the lardons for later!
Bread Mix
100g Plain Flour
220g Maize Flour
5g Salt
1 Tsp Baking Powder
1 Tsp Bicarbonate of Soda
1 Whole Egg
350g ButtermilkLardons
Reserved Bacon Fat
In a jug or bowl, combine the Egg and Reserved Bacon Fat to the Buttermilk.
Place the dry ingredients into another good sized bowl.
Simultaneously pour and mix the Buttermilk combination with the dry ingredients and gently bring together. Do not over work it!
Add in the Lardons and stir through.
Stage #2

Bread Mix
10g Butter
Preheat the oven to 200ºc.
Heat up a heavy based Baking Tray with some butter or lube or whatever. Joking use Butter!
Take the tray out, pour in the Bread Mix and let it stand for 5 minutes.
Stage #3
>Bake it til’
you make it.
Place your tray back in the oven, middle shelf, and bake for 25 minutes. Check your bread’s fully baked by putting a small knife in the middle and see if its wet - adjust your time accordingly.
