Time
So, I think Cam and I work pretty amazing together. Both, as a couple and in our work. I’ve just never been worried that we would struggle to work professionally and bring out the best in each other. Perhaps that’s because we’ve worked in restaurants together in the past. Although, back then we were far from professional! Let’s just say we were never afraid of public displays of affection. Apologies to those of you that had to put up with our blinders for everything and everyone other than each other. Sorry, not sorry!
Anyway, when we are coming up with recipes for Junk we tend to bounce off each other. Either one of us decide’s what we want to make, Cam plans out the recipe while I think visuals. Most of the time, Cam will cook up a trial version where we both have a taste, maybe do a trial shoot, or just scran the lot. We have a little chat about flavour, texture, plating etc. Nine times out of ten we both absolutely love it and only make very minor corrections. When we give each other criticism we both take it very well, in fact we’re excited to hear both the positive and negative to drive us to be the best we can.
This recipe, however, wasn’t like that! Cam got the first batch out the oven. Sliced up this stunningly warm loaf and shouted me through for a taste. Somehow my expression must have told a deeper story to what I was thinking, or perhaps, Cam was just super chuffed with himself and didn’t expect my eloquently thorough, “There’s something missing...” Before I even finished the sentence the whole loaf was in the bin. I don’t think I really knew what to say as he’s always so accepting of any opinions. An hour or so later he tweeked the recipe slightly, made another batch and we had another taste. I could feel him looking into my soul with that bite. Guess what.. “There’s something missing...” Bin! So, third time lucky I finally figured out what it was… just a bit more garnish - bloody delicious! The look he gave me burned and then thankfully an eruption of laughter. Let’s just say, he’s never been too quick to throw anything else out since. Twat! :)

Serves 4 - 8
Hey!
Super tasty wee bread that’s a great show stopper when cooking for friends. A nice alternative to plain ole’ garlic bread to serve alongside a tasty pasta dish or for general grazing.
Overall, a lovely fragrant loaf with soft, chewy dough. The black garlic gives a subtle earthy taste and the rosemary/salt combo is the tits. Enjoy!

The Recipe
Stage #1
>Mix it up!
550 Strong Bread Flour
20g Yeast
50g Extra Virgin Olive Oil
2 Tsp Maldon
2 Tsp Caster Sugar
290 Tepid Water
30g Black Garlic (Bashed up)
Place the Flour, Yeast, Black Garlic, Maldon & Sugar into a mixing bowl.
Mix everything together & add Tepid Water and Olive Oil, keep mixing until you have a nice dough like mixture.
Knead the dough for 6-8 minutes or if using a Stand Mixer turn on a medium speed for 6 minutes.
Shape the bread by tucking the dough underneath itself and keep rotating and repeating until you have a nice smooth rounded dough.

Olive Oil
Maldon Salt
Rosemary, Roughly Chopped
Clingfilm
Place in a large bowl and cover with a damp tea towel, leave for 1-2 hours until doubled in size.
Get a decent sized roasting tray that is going to fit the dough (remember it will double in size) you can always split the mix into two trays. Drizzle the Olive Oil into the tray and rub it around to cover the edges. Push the dough into each corner - really get it in there!! Make sure there is equal disparity of the dough. This will rise!!
Coat the dough in a little bit of Olive Oil, generously sprinkle the Maldon and the chopped Rosemary.
Cover the tray in Clingfilm and leave for another 1-2 hours till double or tripled in size.
Stage #3

you make it.
Pre-heat a fan assisted oven to 210ºc.
Gently remove the Clingfilm from the tray and place in the middle of the oven. Bake for 15 Minutes.
Remove from the oven and cool on a wire rack for at least 30 minutes before cutting!
