So one of our favourite little places to go in Edinburgh is Chez Jules! Absolutely cracking little restaurant. Now, they know how to do hospitality right! Do you know, I can’t even remember how we stumbled across this place. Well, despite it being on the same street as Cam’s current job. Regardless, I’m so glad we did!

So, go to this little place during their lunch service and you can get a 3 course meal for under a tenner. Cheap you say? Well, they also throw in a bundle of treats to start on the house: salad; dressing; olives; yummy pickley stuff; and yes you guessed it a baguette! Now, the baguette’s nothing special, you know pretty standard tasty white french baguette that you can get from the supermarket. However, every-time we buy a baguette, I can literally taste Chez Jules. You know, like one of those intensive Childhood food memories.

Now, if you know us personally or have read enough of these little stories you may start to see a pattern. You might think, “They’re quite cheap, eh?!” It’s really not that! We do love a bargain, but more importantly, it’s all about the value for money. We’re more than happy to spend all of our worldly possessions, we just don’t want to be given a polished jobby for doing so. Now, when someone surpasses your expectations or you get given a wee complimentary something you weren’t expecting - now thats a great feeling.

Anyway, go to Chez Jules and get a French Onion Soup, Steak Frites & either of the wee desserts. Make sure you get an extra order to takeaway for your other half, you’ll get a massive smile and easy browny points!

Hey!

So, we think our baguette is pretty bloody tasty! It’s not like your normal bog standard baguette. We love to bastardise as much as we can - because we can!

This one’s for your fancier crowd. You know, when you’ve got those kinda’ people around and you’re trying to show off your fabulous side. “Ooooh, wow! You even made your own bread!” Smile, wave and feel your ego inflate a wee bit more. We all need it to be caressed from time to time. You even might feel proud of yourself! Remember, self love is the best love!

Sorry, for the tasting notes… a nice light crust on top of a good hearty bread, airy enough to soak up all the saucy goodness, and a good bite to fill the gaps. Noice!


Equipment…

>Stand Mixer



The Recipe


Stage #1
>Mix it up!

580g Strong Bread Flour
64g Rye Flour
64g Wholemeal Flour
380g Tepid Water
25g Salt
5g Caster Sugar
26g Fresh Yeast

  • Mix all the Flour & Salt together and fully incorporate with each other.

  • Place the Yeast, Sugar & Tepid Water into a Stand Mixer and whisk together. Leave to stand for 5 minutes.

  • Slowly add in the Yeast mixture until fully incorporated into the dough.

  • Continue to mix on a medium speed for 6 minutes.

  • Empty onto a counter and work the dough until nice and shiny.


Stage #2
>Prove

Flour for Dusting

Tea Towel
Clingfilm

  • Place into a large greased bowl and cover with a damp tea towel and leave to prove for 2 hours.

  • When the dough has doubled in size empty out of the bowl and knock back.

  • Divide the dough into equal pieces and shape into a ball - flour your work surface and roll into a sausage like shape.

  • Fold pleats into a floured tea towel and place your worked moulded dough into the pleats and cover the dough with some oiled clingfilm.

  • Leave to rise for about 3 hours.


Stage #3
>Bake it til’
you make it.

 
  • Preheat the oven to 220ºc.

  • Very gently move your bread onto a baking tray.

  • Score the bread and coat with some excess flour.

  • Place your bread in the centre of the oven and throw 1 cup of water onto the base of the oven and immediately close the door - This will help create a decent crust. Bake for 19 minutes.

  • Remove from the oven and cool on a wire rack.
